The Palomar
Sydney
A flame-driven feast that channels the romance of Mediterranean conviviality.
From London to Sydney, The Palomar brings with it its classic, deeply evocative spirit. Named after the Spanish word for ‘dovecote’ and inspired by the sun-soaked cuisines of Southern Spain, North Africa and the Levant, the restaurant revolves around an open kitchen bar, where fire anchors the cooking and guests watch the chefs’ choreography unfold... nothing says ‘warm hospitality’ quite like that.
The menu delights with house-made breads and dips to ember-roasted vegetables, before arriving at whole fish and meat for two, designed for sharing with drama and generosity in equal measure.
The wine list stretches from cult natural producers to old-world classics, charting a journey through some of the world’s most compelling terroirs.
Why we love it
The drinks: A wine list that reads like a map, with Burgundy heavyweights, volcanic island rarities, and Georgian amphora gems.
The food: Smoky and generous plates that travel the Mediterranean.
The vibe: The signature pink-tinged light sets an ambiance of instant chemistry, making The Palomar Sydney’s new classic.
