Up on the roof, Paris does what Paris does best: shows off. Bonnie sits right in the middle of it, getting better as the sun goes down and worse for anyone who said they were only staying for one drink. Sure, it starts as drinks. Then it becomes a table. And then somehow you’re still there, ordering something else and pretending tomorrow isn’t a thing. Bonnie Bar doesn’t push you to stay. It just removes all reasonable reasons to leave.
This is a bar where cocktails are allowed to have personality. Familiar flavours show up, just slightly off-script. Citrus that hits differently. Herbs where you weren’t expecting them. Drinks that feel like they’ve read the brief and ignored it anyway. Nothing is complicated for the sake of it. Just designed to keep you guessing (and ordering another one).
